After selling out reservations for the opening season of Noma 2.0 in less than 24 hours, the next seating ― which pays tribute to the vegetable kingdom ― is also likely to be snapped up quickly.

If the new Noma is on your dining bucket list this summer, best mark off Monday, March 5 and get your clicker finger ready: Reservations open at 4pm CET local Copenhagen time, for seatings that run from late June to mid-September.

For the summer menu, the Scandinavian plant kingdom is given place of honour on the plate.

“We will forage for the freshest ingredients in every lake, river, stream, meadow and woodland, work closely everyday with our collaborators to harvest their best crops, and grow some produce of our own on our urban farm,” reads the description.

The tasting menu is meatless, and a vegan option is also available.

The next season after that focuses on game meats and forest foods like berries, mushrooms, nuts and wild plants and runs from early fall to January.
